Put all ingredients into a food processor and blend until coarse paste forms.
If it doesn't stick and hold in a ball, add a few more dates or a tablespoon of water and blend again. Once it will hold it's shape, roll into quarter-sized bites.
Another option is to make these into bars… press the mixture into a plastic wrap or parchment lined 5 x 9 pan. Let it chill in your fridge for several hours before removing it from the pan and cutting into squares or bars. You may need to wet your knife to get a clean cut and rinse it off a few times while you cut it into bars.
Store in an airtight container at room temperature for a softer bite or in the fridge for a firmer texture.
