¾cuphard or sparkling apple cider - at room temperature
2largeeggs - sub Vegan Eggs if needed
1 cupcanned 100% pumpkin
Nutty Topping
½cup chopped pecans
4teaspoonsugar
½ tspcinnamon
1tablespoonmelted butter/canola or coconut oil
Instructions
Apple Cider Pumpkin Bread
Preheat oven to 350 degrees
In a medium bowl combine flour, salt, baking soda, baking powder, pumpkin pie spice and cinnamon and set aside.
In a large bowl blend the remaining ingredients (from sugar to pumpkin).
Gradually add the flour mixture until combined.
Pour the batter into a well-greased loaf pan.
Sprinkle Nutty Topping evenly on top.
Bake for 1 hour and 10 minutes. You may need to put aluminum foil over it to prevent too much browning part way through the baking time. Let cool and enjoy with vanilla ice cream... or by itself:-)
Nutty Topping
Place all ingredients in a small bowl.
Mix until well combined.
