2vegan eggs - 2 tablespoons chia or flax seeds + 6 tablespoons warm water
1cupgluten-free bread crumbs - not the panko style
2tablespoonswhole milk
2poundsground beef - or meatloaf mix
½cupbarbecue sauce + ⅓ cup for topping - any gluten-free variety
½cupshredded sharp cheddar cheese
1tablespoonItalian Seasoning
2teaspoonsgarlic powder
1teaspoononion powder
1teaspoonfine sea salt
½teaspoonfreshly ground black pepper
Instructions
Preheat the oven to 350 degrees.
Combine the chia or flax seeds and water In a small bowl. Once the water has been absorbed (15 mins or so) blend smooth if desired or leave as it is for added crunch.
In a large mixing bowl, combine the bread crumbs and milk. Then add the remaining ingredients and mix well.
Transfer the meatloaf into a 2 pound loaf pan. Pour the remaining barbecue sauce on top.
Bake for 1 hour 15 minutes, let cool for 15 minutes before cutting and serving.
