Ingredients  

  • ½ Lb cooked large shrimp - shelled, deveined and roughly chopped
  • ¼ cup fresh squeezed lemon juice - 2-4 lemons
  • 1 small rib celery - finely diced
  • 1 ½ teaspoon cajun seasoning - I use Emeril's
  • 2-3 stems fresh thyme, leaves only
  • salt to taste

Instructions

  • Mix all ingredients in a small bowl. Let marinate in the fridge for at least an hour. Serve with tortilla or plantain chips.
