Ingredients  

  • 3-4 large gold potatoes
  • 1 lb broccoli florets
  • 1 lb carrots
  • 1 lb chicken apple sausage - *check label for allergens
  • 3 tablespoon sesame or canola oil
  • 4 tablespoon Dad's Special Spice Mix - sub your favorite seasoning mix

Instructions

  • Preheat the oven to 425 degrees.  Line and grease 1 or 2 large sheet pans with aluminum foil and oil.
  • Rinse vegetables well.  Chop potatoes & carrots to a ½ inch dice.  Trim broccoli to bite sized florets.  Slice sausage into bite sized pieces.  Place all in a large bowl.  Coat with oil and Dad’s Special Spice Mix.
  • Spread mixture out in a single layer on sheet pan(s) and bake for 45-50 minutes, stirring after about 20 minutes.  If browning too quickly and potatoes aren’t cooked through, cover with aluminum foil and continue to bake until potatoes are fork tender.
