Ingredients  

Lamb

  • 4-5 pound boneless or bone-in leg of lamb
  • 1 teaspoon Herbs de Provence
  • ½ teaspoon garlic powder
  • 1 tablespoon olive oil
  • salt & pepper to taste

Mint Awesome Sauce

  • 2 cups fresh mint leaves
  • 1 lemon - zest & juice
  • ¼-1/2 teaspoon Salt
  • 2 tablespoon olive oil

Instructions

Lamb

  • Preheat oven to 375 degrees. Line a baking sheet with aluminum foil or parchment paper for easy clean up.
  • Drizzle lamb with olive oil. Use your hands to make sure it gets all over the meat evenly.
  • Sprinkle herbs and seasonings evenly on all sides of the meat.
  • Roast in oven for 1 ½ to 2 ½ hours. Remove from oven and allow to rest for 10 minutes before cutting. Checking the internal temp, remove at 140 degrees for medium rare, 150 degrees for medium, 165 for well done. Serve with Mint Awesome Sauce.

Mint Awesome Sauce

  • Zest lemon using a zester or the small holes on a grater. Set the zest aside.
  • Add juice of the lemon, mint leaves, salt and oil to a blender or smoothie maker.
  • Pulse a few times until mint is chopped and all ingredients are well combined.
  • Pour mint mixture into a small bowl and stir in the lemon zest. You can store this covered in the fridge for 2-3 days, but it will begin to brown as time goes on.
