- 2 avocados - diced
- 1 cup sweet onion (about 1 medium) - diced
- 2 cups tomatoes (about 4 medium) - seeded and diced
- ¼-1/2 cup fresh cilantro - chopped
- 2 teaspoon fresh garlic - chopped
- salt and pepper to taste
- 2 limes juiced
Rinse and chop all ingredients. Combine in a large bowl, stirring gently so as not to smash the avocado too much. Serve right away with chips, on grilled chicken, in tacos, on salads or fish.
If you want to prep this hours ahead, add all ingredients except for the avocados, then dice them and gently stir them into the mix just before serving. Otherwise they will begin to brown pretty quickly…. Even with the lime juice on them.
