Gourmet Grilled Cheese

Ingredients
  

  • 8 slices gluten free sandwich bread (I use Udi's New Delicious Soft White)
  • 1 8oz. block of Fontina cheese (cut into slices)
  • 1 3oz. jar of Truffle Honey (Available on Amazon & at Whole Foods)
  • 1 5oz. container of arugula (rinsed and let dry)
  • butter for bread

Instructions
 

  • Assemble your sandwiches by starting with your first slice of bread, then cover with cheese, drizzle with honey, add a handful of arugula, top with more cheese and top with another slice of bread. Butter the top of the bread.
  • Heat your pan over medium heat, place your assembled sandwich, butter side down onto the heated pan. Butter the top slice of bread while you wait for the bottom to brown. Once browned, flip and brown the other side.
  • If you are making sandwiches in batches, you can keep them warm in a 200 degree oven until you are ready to serve.
