Ingredients  

  • 10 oz canned corn - drained
  • ½ red bell pepper - seeded and diced
  • cup fresh cilantro - rinsed well and finely chopped
  • cup red onion - finely chopped
  • cup sour cream
  • cup cotija or queso fresco - crumbled
  • 2 tablespoon lime juice - freshly squeezed
  • ½ teaspoon smoked paprika
  • salt and pepper to taste

Instructions

  • Combine all ingredients in a medium bowl.  Mix well.  Serve right away or store covered in the fridge for up to 24 hours.
