Apple Bites

Apple Bites taste like healthy little bites of apple pie.  They are sweet and have a little spice and every thing nice (had to say it).  Without any refined sugar, the dates lend a caramel flavor and a soft and chewy texture.  And they are easy as pie to make!  Holy cow am I using a ton of cliches… but the bottom line is, that they are very easy to love.

Did I say easy?

There are only 4 ingredients.  And they all go in a food processor at once.  As soon as the mixture is ground up and it holds together when pressed into a shape, it is done!  I like to roll them into balls or press them into the bottom of a loaf pan to shape bars.  We take them along for easy snacking on road trips.  And I don’t mind packing them as snacks for the kids at school.

Food Allergy Friendly too!

I use Bob’s Red Mill brand gluten free oats and the remaining ingredients are free of other allergens, which makes dairy free, soy free, nut free, sesame free, egg free and vegan.  They tick a lot of those tough food allergy friendly boxes!

Apple Bites

Quick and easy Apple Bites are a healthy and tasty snack for the whole family.

Ingredients

  • ¾ cups well-packed pitted dates make sure they are fresh & very moist
  • 1 cup well packed dried apples not the freeze dried, you want the soft variety
  • ½ cup gluten free instant oatmeal I like Bob’s Red Mill
  • ½ tsp cinnamon

Instructions

  • Put all ingredients into a food processor and blend until coarse paste forms.  
  • If it doesn't stick and hold in a ball, add a few more dates or a tablespoon of water and blend again. Once it will hold it's shape, roll into quarter-sized bites.
  • Another option is to make these into bars… press the mixture into a plastic wrap or parchment lined 5 x 9 pan.  Let it chill in your fridge for several hours before removing it from the pan and cutting into squares or bars. You may need to wet your knife to get a clean cut and rinse it off a few times while you cut it into bars.
  • Store in an airtight container at room temperature for a softer bite or in the fridge for a firmer texture.
