Apple Streusel Pancakes

Gluten free Apple Streusel Pancakes are fluffy pancakes studded with fresh diced apple with a crispy layer of cinnamon-oat streusel cooked into one side. Then drizzle it with icing just like it were pastry coming fresh from a bakery. Top it with a little extra diced fresh apple and crunchy streusel mix for added texture and flavor if you’d like (that’s what I like). It is an extra special way to start your gluten free morning! 

About them Apples

Granny Smith apples are my favorite type of apple to cook or bake with. They don’t have an excessive amount of moisture; they are a little tart which offers balance to sweet recipes; and they hold some texture and don’t turn to mush when cooked. If you prefer another type of apple, use what you have on hand or what you like best. There aren’t any hard and fast rules when it comes to apples in this recipe.

The Method

Combine the flour, sugar, baking powder, baking soda, salt, and cinnamon together in a small bowl. Then in a mixing bowl, beat the eggs and buttermilk together. Whisk the dry ingredients into the egg mixture until no lumps remain. Then stir in the melted butter until no oily streaks remain. Fold the diced apple in last and let rest while you prepare the streusel and icing. 

The Streusel

The simplicity is part of what makes the streusel magic. Gluten free instant oats, brown sugar and cinnamon are mixed together then drizzled with melted butter. The butter acts like glue to hold it all together and allows the sugar to caramelize on the frying pan. Just about a teaspoon of the streusel gets sprinkled onto the top of the wet batter. Then when the pancake is flipped to cook the streusel side, it turns into a crispy-crunchy layer that is unexpected deliciousness in a pancake. 

The Icing on the Apple Streusel Pancakes

This icing couldn’t be any easier! Just a teaspoon or two of apple juice, milk, or water mixed into the powdered sugar allows it to dissolve just enough to make a thick icing. A generous drizzle adds just enough moisture and sweetness to bring it all together in one bite.

Ingredients

For the Pancakes:

  • 1 ½ cups Bob's Red Mill 1 to 1 Baking Flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp fine sea salt
  • ½ tsp ground cinnamon
  • 1 ½ cups buttermilk full-fat or low-fat
  • 2 large eggs
  • 6 tbsp butter melted
  • 1/2-3/4 cup Granny Smith apple diced to 1/4"

For the Streusel:

  • ¾ cup gluten free quick cook oats
  • 3 tbsp light brown sugar
  • ½ tsp ground cinnamon
  • 2 tbsp butter melted

Toppings:

  • 1 medium Granny Smith apple cored & diced to 1/4"
  • ½ cup powdered sugar
  • 2 tsp water, milk or apple juice *just enough to dissolve the sugar

Instructions

  • In a small bowl, combine the flour, sugar, baking powder, baking soda, salt, and cinnamon with a fork until uniform in color.
  • In a medium mixing bowl, beat the buttermilk and egg together until uniform in color.
  • Whisk the flour mixture into the buttermilk mixture until no lumps remain.
  • Incorporate the melted butter making sure that there are no more streaks of oil, then add in the diced apple. Set aside while you make the Streusel & Icing.

For the Streusel:

  • In a small bowl, combine the oats, sugar and cinnamon. Drizzle in the melted butter and stir to combine well. Set aside.

For the Icing:

  • In a small bowl combine just enough apple juice, milk or water with the powdered sugar to create a thick glaze. Stir to remove the lumps. If it is too thin, add more sugar until you get the right consistency. Set aside.

To Make the Apple Streusel Pancakes:

  • Heat a large griddle or frying pan to medium heat.
  • Ladle the pancake batter onto the griddle as usual making pancakes approximately 4-5 inches in diameter.
  • Sprinkle 1 tablespoon of the Streusel on top of the wet batter while one side browns.
  • Flip the pancakes and allow the other sides to brown. Work in batches until all of the batter is used.
  • You can keep pancakes warm in a 200 degree oven on a baking sheet. Serve with diced apple and a generous drizzle of icing.
