Cajun Spiced Cod with Peach Salsa

The first time I made this Cajun Spiced Cod with Peach Salsa, my daughter told me that I could make this more often.  Or rather, requested that, I do in fact, make it more often. Then she proceeded to eat two servings and came back for more about an hour later.  That was when I knew I had a winner.  The cajun seasonings that coat the filet offer a bit of heat that is balanced by the sweet and tangy Peach Salsa.  A side of white rice, a few slices of avocado and an easy green salad makes for a healthy meal that is special enough for guests and quick enough to make any night of the week.

Making the Cod

Mild in flavor, meaty, yet still light & flaky, cod is an easy fish to enjoy.  It is also a great canvas for all types of seasonings.  To make the spice mixture, all of the dry ingredients go into the bowl at once and get mixed well with a spoon.  You can mix this together and store it in a ziplock bag weeks in advance if you’d like too.  

For this recipe, I coat the cod in mayonnaise because it adds a little extra flavor, moisture and it holds a thicker layer of seasoning on the fish, which results in even more flavor overall.  If it seems strange to use mayonnaise, consider the ingredients in mayo… egg and oil.  Both are often used for battering all kinds of foods.  If you are still on the fence… no worries!  Substitute the mayo with olive oil along with the same seasoning mix and it will still turn out great.  I have made it both ways with delicious results. 

Once you have coated the cod with mayonnaise and the cajun seasonings, lay it on a greased foil lined baking sheet and pop it in the oven.  About 10 minutes later, it is fully cooked and ready to eat!  It cooks that quickly!

The Peach Salsa

Fresh, sweet and a little tart, this Peach Salsa is quick and easy to whip up.  Once you have diced the peaches and chopped the cilantro, onion and jalapeno, add freshly squeezed lime juice, salt and pepper to taste and mix it well.  It can be made several hours ahead and stored in the fridge until ready to eat.  Not only is this a great “sauce” for the Cajun Spiced Cod, but it is fantastic with grilled chicken, on tacos and scooped up with tortilla chips too!  

Serving & Sides

Round out the meal with steamed white rice, sliced avocado and an easy side salad.  Or layer it all in some Mission Gluten Free Corn Tortillas to make some amazing fish tacos.  Mix things up with my Coconut Rice or Black Beans and Rice.

Ingredients

  • 4 cod filets
  • ¼ cup mayonnaise sub olive oil for egg free option
  • ¼ cup corn flour not corn starch
  • 1 tsp salt
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried thyme
  • ½ tsp dried oregano
  • ½ tsp ground black pepper
  • ¼ tsp dried chipotle powder

Peach Salsa

  • 2 peaches small dice
  • ¼ cup cilantro finely chopped
  • ¼ cup red onion finely chopped
  • 1 tbsp jalapeno seeded & finely chopped
  • 1 tbsp lime juice freshly squeezed
  • salt and pepper to taste

Instructions

  • Preheat the oven to 400 degrees.  Line a baking sheet with foil and grease well with cooking spray, butter or olive oil.
  • Combine the dry seasonings for the cod in a small bowl.  Stir to evenly distribute the seasonings.
  • Coat the filets of fish on both sides with mayonnaise with a pastry brush. Sprinkle the seasoning mixture on top of the mayonnaise.
  • Place the seasoned fish on the prepared baking sheet.  Bake for 8-12 minutes, depending on thickness.  Remove and serve right away with peach salsa and a side of white rice, fresh avocado slices or in tacos.

Peach Salsa:

  • Combine all ingredients in a small bowl and stir gently to combine well.  Store covered in the fridge until ready to eat.
