Basil Awesome Sauce

Ingredients  

  • 2 cups fresh basil leaves - well packed
  • 2-3 cloves fresh garlic - 2 should be good, but add more if you really like garlic!
  • ¼ teaspoon Salt
  • ¼ teaspoon pepper
  • ¼ cup good quality olive oil

Instructions

  • If you don't like small pieces of garlic in your sauce, start by blending the olive oil & garlic in a smoothie maker or blender until the garlic is pureed almost smooth. If you don't mind small pieces of garlic, skip this step.
  • Pull basil leaves off of the stems, throw the stems out and rinse the leaves. Add all ingredients to blender.
  • Blend or pulse a few times until the herbs are chopped up to the size you like. This usually takes 15-30 seconds. You may need to scrape down the sides to get all of the basil leaves chopped up.
  • Serve with pasta, meats, vegetables or seafood. Everything tastes better with a little of this on it! Store in a sealed container in the fridge for 2-3 days. It will start to brown as the days go on due to air getting to it. It should remain good to eat for up to a week.
