Wash the lemon and zest it using a zester or small holes on a grater. Cut the lemon in half and add the zest and juice to a bowl.
Pull mint leaves off of stems and rinse thoroughly. Throw the stems away. Finely chop the leaves. Put them and remaining ingredients to the bowl with the lemon juice and zest. Stir to combine. It is ready to serve!

Pull mint leaves off of stems and rinse thoroughly. Throw the stems away. Put fresh mint leaves and all other ingredients (except lemon zest) in your smoothie maker or blender.
Puree quickly or pulse a few time to chop the leaves and mix the ingredients.
Pour into a bowl and stir in the lemon zest. Leftovers can be stored covered in the fridge for 1-2 days, before starting to turn color.
