Mint Awesome Sauce

Mint Awesome Sauce is like the favorite cousin of basil pesto.  Very simple and fresh ingredients quickly come together to pack a mean punch of flavor.  It will take grilled or roasted meats and veggies to a new level and well… make them awesome!  What is extra special about this Mint Awesome Sauce is that it is really healthy.  It fits into just about any diet.  Gluten free, paleo, keto, vegan, dairy free and nut free.  I could go on, but just check out the recipe and you’ll see what I mean:-)

Have a Blender?  Make it Smooth…

If you have a blender or a smoothie maker you can make a smooth version of this Mint Awesome Sauce like you see in the photos.  Simply put all ingredients (except the lemon zest) in the blender at once.  Pulse it a few times.  Once it is smooth, pour it into a small dish and stir in the lemon zest.  That’s all there is to it!

No Blender? No Problem!

If you don’t have a blender or just want the added texture of finely chopped ingredients?  Awesome!  Same ingredients, just finely chop the mint leaves to your liking and stir it all together in a small bowl.  And done!

Favorite Combinations

The fresh mint and tangy lemon are a great compliment to my Company-Worthy Easy Lamb Roast in the photo below.  It is also great on Perfect Thyme Chicken or Spaghetti Squash with Bacon and Caramelized Onions.

Mint Awesome Sauce

Mint Awesome Sauce combines fresh mint, lemon & simple seasonings to make an easy sauce for meat and vegetables to make every dish a bit more awesome!

Ingredients
  

  • 2 cups fresh mint leaves
  • 1 lemon (zest & juice)
  • 1/4-1/2 tsp Salt (to your taste)
  • 2 Tbsp olive oil

Instructions
 

Chunky Method

  • Wash the lemon and zest it using a zester or small holes on a grater. Cut the lemon in half and add the zest and juice to a bowl.
  • Pull mint leaves off of stems and rinse thoroughly. Throw the stems away. Finely chop the leaves. Put them and remaining ingredients to the bowl with the lemon juice and zest. Stir to combine. It is ready to serve!

Puree Method

  • Wash the lemon and zest it using a zester or small holes on a grater. Set aside the zest. Cut the lemon in half and add the juice to your blender.
  • Pull mint leaves off of stems and rinse thoroughly. Throw the stems away. Put fresh mint leaves and all other ingredients (except lemon zest) in your smoothie maker or blender.
  • Puree quickly or pulse a few time to chop the leaves and mix the ingredients.
  • Pour into a bowl and stir in the lemon zest. Leftovers can be stored covered in the fridge for 1-2 days, before starting to turn color.
