Rinse and trim the stems off of your zucchini. Spiralize or cut zucchini into a small dice. Set aside in a microwaveable serving bowl.
In a large frying pan, heat olive oil over medium heat. Add tomatoes, season with salt and pepper and let them cook for about 10 minutes, stirring occasionally. They will begin to burst open, help them along by gently pressing on them with the back of your spoon or spatula.
Add the garlic, wine and sugar. Stir to combine. Let it cook for another 2-3 minutes to soften the garlic. Taste and re-season if needed.
At this time, microwave the zucchini for about 1-2 minutes. Just enough to heat it up, but not enough to make it mushy.
Turn off the heat and add the basil to the tomato mixture and give it a stir. The sauce is ready to pour on top of the warmed zucchini spirals and you are ready to serve! Sprinkle with freshly grated parmesan cheese if you wish.
