Zoodles with Easy Tomato and Basil Sauce

Zoodles with Easy Tomato and Basil Sauce is fresh and light with lots of flavor.  It is crazy easy to make.  Perfect for a weeknight meal and the leftovers are great for lunch the next day too.  I also make this sauce to top gluten free Barilla pasta.  When I want to lighten things up and add some veggies to our meal, I make zoodles.  The kids really love them too!

If you haven't made "zoodles" before, it is easy, but does require a spiralizer of some sort.  There are inexpensive hand held types that I have seen at my local grocery store for sale.  I haven't tried that kind, but I hear they work well.  If you don't think you will be spiralizing very much, it would be a reasonable option.  If you think you will be doing a lot of it, you may want to consider one similar to mine.  It is made by Paderno and is available on Amazon.  There are many other brands and options with more blades as well.  I spiralize all kinds of veggies and potatoes so this makes sense for my needs.  Many grocery stores are now selling all kinds of spiralized veggies too, so that might be worth the time and money too.  Don't want to deal with this "spiralizing" stuff?  Chop your zucchini into a small dice.  That will work just fine too!  So many options!

The Sauce

This Tomato and Basil Sauce is unbelievably fresh and flavorful given how easy it is to make.   You start with heating up the tomatoes in your frying pan until they start to burst.  This releases all of the wonderful natural juices.

This part is fun.  Using the back of your spoon or spatula, lightly press the tomatoes until you feel them pop.  This will speed up the cooking process a bit.  And it is fun;-)

After that, you just add the remaining ingredients, let it heat up, give a stir and done!  Pour it on top of your warm zoodles and you are ready to eat.  Looks and tastes like it is fresh from your garden.  If only I could keep a plant alive, this might actually be possible! LOL!

Spiraled zucchini make healthy fun in this quick weeknight recipe for Zoodles with Easy Tomato and Basil Sauce.

Ingredients  

  • 2-3 small/medium zucchini
  • 1 tablespoon olive oil
  • 2 pints grape tomatoes - approximately 4 cups
  • 2 cloves fresh garlic - chopped finely
  • ¼ cup white wine
  • ½ teaspoon sugar
  • ¼ cup fresh basil - roughly chopped
  • salt and pepper to taste

Instructions

  • Rinse and trim the stems off of your zucchini. Spiralize or cut zucchini into a small dice. Set aside in a microwaveable serving bowl.
  • In a large frying pan, heat olive oil over medium heat. Add tomatoes, season with salt and pepper and let them cook for about 10 minutes, stirring occasionally. They will begin to burst open, help them along by gently pressing on them with the back of your spoon or spatula.
  • Add the garlic, wine and sugar. Stir to combine. Let it cook for another 2-3 minutes to soften the garlic. Taste and re-season if needed.
  • At this time, microwave the zucchini for about 1-2 minutes. Just enough to heat it up, but not enough to make it mushy.
  • Turn off the heat and add the basil to the tomato mixture and give it a stir. The sauce is ready to pour on top of the warmed zucchini spirals and you are ready to serve! Sprinkle with freshly grated parmesan cheese if you wish.
