Chocolate Cake Mix
By far, my favorite gluten free chocolate cake mix is made by Pamela’s products. It is moist and super rich with chocolate flavor. It isn’t grainy at all, the texture is perfect. I make this very often for wheat eaters and they gobble it up, ask for the recipe and have no idea it was gluten free. There are instructions for a more dense version or a more cake-like version on the package. Both versions are terrific- just don’t over bake your gluten free desserts!
My daughter came up with an awesome way to use Pamela’s gluten free chocolate cake mix. Check out these Chocolate Toffee PB Cupcakes. The bits of toffee inside add a layer of caramel flavor that compliments the chocolate nicely. The peanut butter frosting makes it rich and satisfying without being too sweet.
I also love that Pamela’s products are widely available at many grocery store chains. They also make a bunch of other gluten free baking mixes and other yummy desserts. They are very transparent about all of the ingredients that could contain allergens that they use and you can find detailed information about it on the Pamela’s Products website. The gluten free chocolate cake mix does not contain any major allergens! It is manufactured on equipment that is shared with products containing some allergens. As always, check the labels to be sure it fits your needs.
