Crockpot Irish Beef Stew

Not only is this gluten free Irish Beef Stew delicious, hearty and filling, but it’s also a 1 pot complete meal and very easy to make.  That’s a win-win-win! The meat is so tender and juicy when cooked in the crockpot. The meat and the veggies absorb a ton of flavor from the stock, gluten free beer, herbs and seasonings.  And you don’t have to really work for it! Just throw everything in the crockpot and the magic happens on it’s own. Love it!

A Little Extra Something

Since the Irish Beef Stew basically makes itself, I thought I would mention two items that will make this meal even more fabulous.  The first is Basil Awesome Sauce. It is similar to a basil pesto, but is dairy and nut free. The punch of fresh herbs brightens up the stew. It is very easy to make too. All of the ingredients go in the blender, zip and done. The other extra is gluten free Classic Irish Soda Bread or Irish Soda Bread with Cheddar and Bacon. They are made for mopping up your bowl of Irish Beef Stew.  To make it even more appealing, they are very easy to make. There isn’t any kneading, rising or anything else that makes it complicated. Just mix the dry and wet ingredients, shape it, bake it and let it cool.  

Gluten Free Beer

I couldn’t believe my good fortune when I came across the Glutenberg gluten free Stout beer for this recipe.  It tastes amazing! That’s saying a lot because I haven’t been happy with any gluten free beer I have had until this one. I was fairly sure that I wasn’t going to be able to locate a stout like Guinness in a gluten free beer either.  Frankly, I’ve been keeping my eye out for one for years without any luck. Although this type of beer provides the more authentic flavor of an Irish Beef Stew, no worries if you can’t find it. Use what is available in your area and what you like.  As long as you like the beer, it should provide a flavor to the stew that you will enjoy. Don’t like beer? Red wine will work too.

Crockpot Irish Beef Stew

Ingredients
  

  • 3 Lb beef chuck roast
  • 2 Lb gold potatoes
  • 5 large carrots
  • 1 large sweet onion
  • 4 cloves fresh garlic (finely chopped)
  • 2-4 Tbsp cornstarch (depending on how thick you like the sauce)
  • 4-6 cups beef or chicken stock
  • 1 ¼ tsp dried thyme
  • 2 bay leaves
  • 1 16oz. gluten free beer (stout or porter preferably)
  • salt and pepper to taste

Instructions
 

  • Scrub and rinse potatoes. Chop into 1 inch chunks. Rinse and peel carrots, chop into 1 inch pieces. Peel onion and cut into 6 wedges. Peel and chop garlic cloves finely.
  • Combine cornstarch with about ¼ cup of the stock and set aside.
  • Begin by placing half of the potatoes, carrots, onions and garlic at the bottom of the crockpot. Season with salt, pepper, half of the thyme and both bay leaves. Place the roast on top of the veggie mixture. Then place the remaining vegetables, cornstarch mixture and beer on top of the roast. Add chicken or beef stock until it just reaches the top of the roast. Finally season with more salt, pepper and remaining thyme.
  • Put the lid on the crockpot and set to high heat for 6 hours. When ready to serve, put a portion of meat, veggies and sauce into a bowl. Drizzle with Basil Awesome Sauce and serve with a hearty slice of Irish Soda Bread. Recipe links are above in the "A Little Extra Something" paragraph:-)
