Truffled Egg Salad

Truffled Egg Salad may not sound like anything special, but trust me it is.  One of my friends told me that I ruined egg salad for her because she won’t every be able to eat it any other way!  That was one of the best compliments I’ve ever had on one of my recipes.  It is a twist on the classic mayonnaise based egg salad that is flavored with truffle salt and oil for earthy notes.  Crunch from finely chopped celery and fresh chives keep it light and balanced.

Making Truffled Egg Salad

All of the ingredients go into a bowl together at the same time and mix with a large spoon. That’s all there is to it! I started making Truffled Egg Salad to Break the Fast on Yom Kippur, but we all like it so much that I make it for brunch or lunch when we are having friends over. It comes together super fast & I can make it a day ahead… top choice for serving a crowd!

Tips & Ideas

You can also turn this recipe into deviled eggs… I’ve done that a time or two (or 10)…  Just cut the hard boiled eggs in half, mix all of the remaining ingredients with the yolks. Then fill the whites with the yolk mixture. To speed things up even faster, I buy Eggland’s Best Hard Cooked Peeled Eggs.  They work really well for egg salad and for deviled eggs.  I don’t have a problem finding them in just about every grocery store I shop in.

A Little About Truffles

If truffle is new to you, the flavor is definitely unique. Truffles are in the mushroom family and have an earthly flavor like mushrooms, but more distinctive. A little bit goes a long way. It is very expensive and hard to find fresh truffles. They are not farm grown, only foraged in the wild, usually found by trained dogs or pigs. They also have a short shelf life. Freshly shaved truffle on a dish is a luxurious, rare and pricey treat. This is why it is more common to use a truffle flavored salt or infused oil to get that wonderful flavor into a dish.

Truffle oils and salts are becoming more readily available in grocery and specialty stores and can easily be found on Amazon as well. I love to add truffle salt and/or oil to roasted potatoes, french fries, popcorn, eggs, roasted vegetables and Ridonculous Mac and Cheese in addition to some of the recipes you’ll see I linked below. It is easily my family’s favorite seasoning.

Ingredients

  • 12 hard boiled eggs shelled & finely chopped
  • 1 Tbsp fresh chives finely chopped
  • 2 celery stalks finely chopped
  • ½ cup mayonnaise
  • ¾ tsp truffle salt
  • 2 tsp truffle oil
  • ¼ tsp ground pepper

Instructions

  • Mix all ingredients in a large bowl until well combined. Taste and adjust seasonings if needed. Serve as a sandwich, with crackers or on a salad.

Notes

*If I am really in a hurry (or lazy) I buy the shelled, hard boiled eggs from the grocery store. It couldn’t get any easier!
