Pizza Grilled Cheese

I started making gluten free Pizza Grilled Cheese sandwiches for our family while we are on vacation.  Although we love to eat out, sometimes we just want to chill at our Airbnb after running around all day.  I don’t do my normal style of cooking while on vacation. I only make things that are super fast and don’t require a lot of clean up.  But whatever I make, has to taste great! Buttery grilled bread with salty pepperoni, gooey melted cheese and tomato sauce packs a ton of flavor into a sandwich.  I serve Pizza Grilled Cheese along with a salad or some soup. It fills us all up and doesn’t make much of a mess, so I make it often! We’ve enjoyed it so much on vacation, that we have grilled cheese days at home now too.  

Assembly Line

There’s only one thing to watch out for when putting the sandwich together.  Don’t put the sauce on the bread! It will soak it up like a sponge and make the bread super soggy.  Yuck! Make sure you layer the sandwich so that you have cheese next to the top and bottom pieces of bread. I use Udi’s New Delicious Soft White or Multigrain gluten free bread because it is yummy, easy to find in most grocery stores and comes in a full size loaf!

Serving

You know me… I like to have a dip to add another layer of flavor into what I am eating.  Since dipping pizza into ranch dressing is something I do… I mention it here as an option.  Don’t knock it till you try it;-) Some extra marinara or pizza sauce is also great. If you are making these for a lot of people and you need to grill them in batches, you can keep them warm in a 200 degree oven until you are ready to serve.  When I have a large group, I make several varieties of sandwiches, cut them into fours and set them out so that everyone can try the different flavor combinations. Of course I have various dips to go along with them too;-) These work great as an appetizer or for a meal.

Make it a Meal

Check out Kicked Up Kale Salad with Fig Balsamic Dressing, Zoodles with Easy Tomato and Basil Sauce, Pesto Zoodles, Matzo Ball Soup or Italian Wedding Soup. Some fun veggie sides would be Maple Glazed Bacon Wrapped Green Beans, Roasted Green Beans or Garlicky Brussels Sprouts.

Ingredients
  

  • 8 slices gluten free sandwich bread (I use Udi's New Delicious Soft White or Multigrain gluten free bread)
  • 16 slices provolone or mozzarella cheese
  • ½ cup pizza sauce or marinara
  • 24 slices pepperoni
  • butter (to coat outside of bread)

Instructions
 

  • Assemble your sandwiches by placing 2 slices of cheese on a piece of bread, then add about 2 tablespoons of sauce, then 6 slices of pepperoni, followed by 2 slices of cheese and the top piece of bread. If you put the sauce on the bread, it will get soggy… you don’t want soggy bread! Butter the top side of your bread.
  • Heat your pan over medium heat. Place your sandwich, butter side down on the heated pan. Butter the top slice of bread while you wait. Once browned, flip and brown the other side. You can keep the sandwiches warm in a 200 degree oven until you are ready to serve.
  • Serve with extra marinara, pizza sauce or ranch dressing for dipping.
