Make Ahead Banana Bread Oatmeal

Make Ahead Gluten Free Banana Bread Oatmeal is sinfully good and comes together in mere moments.  Then you just throw it in the oven in the morning and your family wakes up to the smell of banana bread baking in the oven.  I like it spiked with rum to start the day off in a festive mood for a holiday breakfast.

A Day Ahead

In a large bowl, mash the banana.  Add the remaining ingredients and give it a good stir.  I use Bob's Red Mill Gluten Free Rolled Oats for this recipe.  Make sure to grease the baking dish before pouring the mixture in.  Then cover and refrigerate until you are ready to bake it.  If you are using a ceramic or glass baking dish, make sure to take it out of the fridge an hour or so before baking so that it doesn't go directly into a hot oven.  This may cause it to crack.  When possible, I try to use metal baking pans in these instances because they can handle the sharp temperature changes better.

Substitutions & Omissions

I put a little brown sugar in the mix, but if the bananas are really over-ripe, they may be sweet enough on their own that you can omit the sugar.  I make this dairy free by using So Delicious products, but feel free to use milk if you'd like.  It is also egg free and soy free, making this super allergy friendly.  Of course you can always omit the nuts if you need to.  As much as I love the flavor that is added from the rum, if you prefer, you can substitute it with a teaspoon or two of vanilla extract.

Ingredients  

  • 2 cups gluten free old fashioned oats - I like Bob's Red Mill
  • 4 very over-ripe bananas
  • 1 ½ cups whole milk or unsweetened vanilla dairy free milk - I use So Delicious for this recipe
  • 1 ½ cups half & half or dairy free vanilla flavored creamer - I use So Delicious for this recipe
  • ½ cup roughly chopped walnuts
  • ⅓ cup rum - optional
  • ⅓ cup brown sugar or maple syrup
  • 2 teaspoon cinnamon

Instructions

  • Grease a baking dish with 8 cups capacity. If making ahead and you are planning to go straight from the fridge to the oven the next day, consider using a metal dish as glass or ceramic can crack from dramatic temp changes. Or let the glass or ceramic dish sit out at room temp before putting it in the oven.
  • In a large bowl, combine all ingredients and mix well.
  • Pour into your greased baking dish. Cover and refrigerate overnight or bake right away.
  • Preheat oven to 350 degrees. Bake for 50-60 minutes, until the top is browned and the center no longer jiggles. Serve warm with a drizzle of maple syrup, sliced bananas and/or a dollop of whipped cream (or dairy free Truwhip or Coco Whip).
