Easy weeknight meals like this Chicken Sausage & Potato Sheet Pan Dinner are always top of mind for our family when we are running short on time to cook.  This year with all of us working and schooling from home, we were also doing a lot more eating at home!  We didn’t necessarily have any extra time to cook though, so sheet pan dinners became a “thing” at my house.

Sheet Pan Ingredients

I use whatever protein, potato and fresh veggies I have on hand to make a sheet pan meal.  In this case, we had Yukon Gold potatoes that bake up tender, carrots, broccoli and Aidell’s precooked chicken and apple sausage.  Feel free to mix things up any way you like.  The most important thing to keep in mind is to cut everything so that it will cook at the same speed.  

Sheet Pan Seasoning

My daughter has spent a lot of time on Tik Tok lately.  Big surprise right?!?!  Well… as much as I’d like to bash it, I can’t.  She seems to learn a lot from it. And she finds the coolest organizing, decorating, craft & recipe ideas to share with me.  

And that is also where she became aware of Dad’s Special Spice Mix (I buy it on Etsy).  As my daughter says, it is like tasting all of the wonderful Indian spices all at once, in a really good way.  There’s a little heat, nuttiness, sweet notes, sesame and smoky curry flavors.  It has become our go-to spice on veggies, potatoes and avocado toast and tastes fantastic on this Chicken Sausage & Potato Sheet Pan Dinner.  You can substitute with another store bought spice blend or garlic powder and Italian Seasoning.  

Sheet Pan Process

I begin by cleaning and cutting all of my ingredients.  The potatoes need to be cut smaller than the veggies because they will take longer to cook.  In this case, I used pre-cooked chicken sausage that only needed to be heated, which allowed me to cut it into larger pieces.  Once everything is cut, everything goes into a large bowl.  Drizzle with oil, sprinkle on the seasonings and mix it to combine well.  Spread the mixture out onto a baking sheet or two and in the oven it goes.  Use a spatula to give it all a stir once or twice while it is cooking so that nothing sticks and burns.

Ingredients
  

  • 3-4 large gold potatoes
  • 1 lb broccoli florets
  • 1 lb carrots
  • 1 lb chicken apple sausage (*check label for allergens)
  • 3 tbsp sesame or canola oil
  • 4 tbsp Dad's Special Spice Mix (sub your favorite seasoning mix)

Instructions
 

  • Preheat the oven to 425 degrees.  Line and grease 1 or 2 large sheet pans with aluminum foil and oil.
  • Rinse vegetables well.  Chop potatoes & carrots to a ½ inch dice.  Trim broccoli to bite sized florets.  Slice sausage into bite sized pieces.  Place all in a large bowl.  Coat with oil and Dad’s Special Spice Mix.
  • Spread mixture out in a single layer on sheet pan(s) and bake for 45-50 minutes, stirring after about 20 minutes.  If browning too quickly and potatoes aren’t cooked through, cover with aluminum foil and continue to bake until potatoes are fork tender.
