This Company-Worthy Easy Lamb Roast is my answer to entertaining without breaking a sweat!  I really enjoy having friends over for dinner.  However, with working full time and keeping up with two young kids… there’s only so much time, right?  So I like to keep the cooking as simple as possible.  The food has to be really delicious though!  This Company-Worthy Lamb Roast along with my Mint Awesome Sauce (recipe below) does the trick.

Preparing the Roast

This is so easy!  Just drizzle a little olive oil and the seasonings on the lamb roast.  Rub it all over so that it is evenly coated on all sides.  Put it on a sheet pan or baking dish and in the oven it goes!  I insert a oven safe thermometer into the center of the roast to monitor the internal temp while it cooks.  In my opinion, this is the only way to truly know when the meat is cooked to your liking.

The Mint Awesome Sauce

Start by zesting your lemon with the small holes on your grater.  Set the zest aside.  Place all remaining ingredients for the sauce in a blender or smoothie maker and blend until combined.  This usually just takes a few pulses.  You can make it as smooth or chunky as you like.  Pour the mixture into a small serving bowl and stir in the lemon zest reserving a little for garnish.  This Mint Awesome Sauce is fresh and tangy, creating a fabulous balance to the richness of the Company-Worthy Lamb Roast.  I can’t imagine one without the other!

You can also use this recipe for a beef roast such as a bottom round roast, sirloin tip roast or for a special treat go with a ribeye roast or tenderloin roast! Serve the beef version with my Basil Awesome Sauce, Parsley Awesome Sauce or Cilantro Awesome Sauce.  Super delicious no matter what combination you choose!

Ingredients
  

Lamb

  • 4-5 pound boneless or bone-in leg of lamb
  • 1 tsp Herbs de Provence
  • ½ tsp garlic powder
  • 1 Tbsp olive oil
  • salt & pepper to taste

Mint Awesome Sauce

  • 2 cups fresh mint leaves
  • 1 lemon (zest & juice)
  • 1/4-1/2 tsp Salt
  • 2 Tbsp olive oil

Instructions
 

Lamb

  • Preheat oven to 375 degrees. Line a baking sheet with aluminum foil or parchment paper for easy clean up.
  • Drizzle lamb with olive oil. Use your hands to make sure it gets all over the meat evenly.
  • Sprinkle herbs and seasonings evenly on all sides of the meat.
  • Roast in oven for 1 1/2 to 2 1/2 hours. Remove from oven and allow to rest for 10 minutes before cutting. Checking the internal temp, remove at 140 degrees for medium rare, 150 degrees for medium, 165 for well done. Serve with Mint Awesome Sauce.

Mint Awesome Sauce

  • Zest lemon using a zester or the small holes on a grater. Set the zest aside.
  • Add juice of the lemon, mint leaves, salt and oil to a blender or smoothie maker.
  • Pulse a few times until mint is chopped and all ingredients are well combined.
  • Pour mint mixture into a small bowl and stir in the lemon zest. You can store this covered in the fridge for 2-3 days, but it will begin to brown as time goes on.
