I buy the jarred stuff too. But truly, there is no comparison between the jarred salsa and making it yourself. The freshness and the simplicity of the ingredients are what make this Fresh Avocado Salsa shine. It is perfectly balanced with creamy avocado, sweet onions and tomatoes, tart lime juice, cilantro and a kick of garlic. It is very quick and easy to whip up for a game night or any other night for that matter.
Making Fresh Avocado Salsa is Easy Peasy
Pulling this Fresh Avocado Salsa together is as easy as 1-2-3. Begin by rinsing your produce well. Cut off as much of the stems of the cilantro as possible and discard those. Roughly chop the remaining greens. I cut avocados in half then twist the halves to open it up. Once I remove the pit from one side, I gently cut a grid of ½" squares into the flesh of the avocado. Then I use a large spoon to scoop out the pieces. It all comes out just as you see in the photo below. Chop the garlic and onion, dice the tomato (removing the tough stem area) and put it all in a bowl. Mix it all up gently so you don't mush anything too much and you are done! Time to dig in. Yum!
Best Scoops
I usually serve Fresh Avocado Salsa with store bought tortilla chips from Late July or whatever Costco is carrying that looks good if we are serving a crowd. If I have the time, I will make Baked Plantain Chips or Tostones for a special treat. Since we are big fans of avocado in my house, I will usually make Fully Loaded Guacamole or Easy Guacamole as well. You know how I love my dips and sauces... I just can't get enough!
Ingredients
- 2 avocados - diced
- 1 cup sweet onion (about 1 medium) - diced
- 2 cups tomatoes (about 4 medium) - seeded and diced
- ¼-1/2 cup fresh cilantro - chopped
- 2 teaspoon fresh garlic - chopped
- salt and pepper to taste
- 2 limes juiced
Instructions
- Rinse and chop all ingredients. Combine in a large bowl, stirring gently so as not to smash the avocado too much. Serve right away with chips, on grilled chicken, in tacos, on salads or fish.
- If you want to prep this hours ahead, add all ingredients except for the avocados, then dice them and gently stir them into the mix just before serving. Otherwise they will begin to brown pretty quickly…. Even with the lime juice on them.
