Garlic Pepper Roasted Squash

My friend Kim discovered Badia's Harlem Garlic Pepper seasoning and made a version of these Garlic Pepper Roasted Squash for a gathering in our neighborhood.  Everyone went crazy over them!  The kids and adults kept coming back for more.  After requesting that she make them for our get-togethers a few times, I finally asked for the recipe.  But she didn’t have one!  She just made it by instinct.  She has some really good instincts;-)  So she shared the ingredients with me and I started playing with the quantities.  I made countless batches for the sake of research;-)  No one in my house complained.

For the Love of Vegetables

I love roasted vegetables, but I also need variation in flavors.  Evidence of this- my salad dressing addiction.  True story.  I had over 25 salad dressings in our fridge at one time.  My husband counted.  He brought it to my attention and jokingly suggested that I find a program to break my addiction.  Instead, I agreed not to buy anymore dressing until I got my collection under 10 bottles!  It was a true struggle because I eat salad every day. To mix up the flavors I vary the add-ins and dressings.  Becoming aware of Badia’s Garlic Pepper seasoning was like finding a fantastic new salad dressing.  It is so simple, but brings this fantastic balance of slightly sweet tang and peppery heat to vegetables.  

 

Easy Peasy

I also love quick and easy vegetable recipes that my kids or I can make on a weeknight.  Garlic Pepper Roasted Squash definitely ticks that box!  It is as simple as cutting the squash, getting it covered with yumminess then roasting in the oven for about 15 minutes until it is lightly browned.

Garlic Pepper Roasted Squash

Ingredients  

  • 1 large zucchini
  • 1 large yellow squash
  • 1-2 tablespoon olive oil
  • 1-2 tablespoon Badia Harlem Garlic Pepper Seasoning
  • ½ cup Parmesan cheese - finely grated
  • a pinch of salt

Instructions

  • Move your oven rack to the upper ⅓ of the oven. Preheat the oven to 450 degrees and line a large baking sheet with parchment paper.
  • Finely grate parmesan cheese.
  • Rinse squash, cut off stems and ends, then cut into rounds approximately ½ inch thick. Place the squash in a large bowl.
  • Drizzle the squash with olive oil and mix it around with your hands, making sure all of the squash are coated well with oil. Then sprinkle approximately 1 tablespoon of the seasoning, salt to taste and about ¼ cup of the parmesan cheese onto the squash and mix again to coat evenly.
  • Lay the squash out in a single layer on the baking sheet leaving as much space between the pieces as possible. Sprinkle with remaining cheese and additional Garlic Pepper Seasoning if you wish.
  • Roast in the oven for approximately 13-15 minutes, until the tops are lightly browned. Remove from the oven and enjoy!
