Pancake & Baking Mix

Bisquick does a great job with their gluten free pancake and baking mix.  Admittedly, I have never made biscuits with it (I will put it on my list to make) but I have made pancakes with the mix more times than I can count!  They always turn out terrific!  The flavor and texture of the pancakes is excellent. They are light and soft, not heavy and dense like some gluten free items.

I usually add vanilla, cinnamon and/or mashed banana to kick up the flavor when making pancakes (I always want to mix things up a bit).  When I put bananas in the mix, we spread peanut butter on them (instead of maple syrup) & they are super delicious. I get a little extra nutrition in the kiddos too, which is never a bad thing, right?  My kids even make them into sandwiches for school by using two pancakes as slices of bread with peanut butter in the middle.  You won’t hear me complaining about that!  We started making those sandwiches with my Gluten, Egg and Dairy Free Banana Pancakes recipe years ago.

This mix makes really good waffles too!  Not quite as good as my Enormous Waffles, but when I need a mix, Bisquick doesn’t let me down.

The original Bisquick gluten free is free of the 8 major allergens.  I have heard that there are versions that contain dairy, so as always, check the labels.
