My gluten free Spicy Broccoli Quiche is such a versatile dish. I make it for breakfast, lunch, brunch and dinner. Great for a Mother's Day brunch... hint, hint! You can serve it with soup, salad or sandwiches for a complete meal. Mix up the seasonings and cheeses if you start to get bored (or are out of an ingredient). It is nearly impossible to mess it up!
Make Ahead Option
This year I made it for our Break the Fast on Yom Kippur. I put all of the ingredients together in a bowl in the fridge in the morning. An hour before we were going to break the fast, I put the filling in the crust and popped it in the oven. It was nice to have something warm and freshly baked to go along with the bagels and lox. A day ahead I usually make Truffled Egg Salad and Tuna Salad with Capers and Dill so there isn't much to actually "do" on Yom Kippur other than set everything out.
The Crust
Another thing that makes this Spicy Broccoli Quiche so easy, is that I use a pre-made gluten free crust. It is the Whole Foods Gluten Free Bakehouse brand. You can find it in the freezer section in a pack of two. It is a large, deep crust that works very well with savory and sweet fillings. Recipe
Spicy Broccoli Quiche
Ingredients
- 6 eggs
- ¾ cup milk
- 1 teaspoon oregano
- ½ teaspoon cumin
- ¼ teaspoon Chipotle Powder - more or less
- salt & pepper to taste
- 8 oz package shredded mild cheddar cheese
- 2 cups broccoli - chopped partially cooked
- 1 prepared frozen crust - I use Whole Foods Gluten Free
Instructions
- Preheat oven to 350 degrees
- Combine all ingredients in a large bowl and mix well.
- Pour into the prepared crust and bake for about 45-55 minutes or until the eggs are set and crust is golden. If the top begins to brown too much, loosely cover with aluminum foil and continue to bake until set. Enjoy!
