Sweet Potato Fries

My Sweet Potato Fries are gluten free, allergy friendly, aip and paleo friendly. As long as you don’t dip them in mayonnaise or ketchup, that is!  Fortunately, they are fantastic just as they are, right out of the oven.

Back Story…

I started making these when my husband and I followed a strict autoimmune protocol (or aip) diet (I have celiac, my husband has Hashimoto’s, both autoimmune diseases).  Sweet potatoes are one of the few starches allowed on the diet.  I was trying to find new ways to cook them and fill the void of other missing foods (like french fries).  The Sweet Potato Fries went over so well with my family that we still make them years after we stopped following the diet strictly.  When I am not following the AIP diet, I love to dip them in mayonnaise mixed with a little chipotle in adobo.  Shhhh!  Don’t tell!

Cut, Season & Bake!

They are so simple to make and you only need a few ingredients and some decent knife skills.  I suggest cutting the potato into coins/circles as thick as you want your fries, then cut them in strips across.  This will help to eliminate the chance of the potato rolling away while you press down with a sharp knife.  Yikes!!  Throw them in a bowl and drizzle oil and seasonings on top.  Get them well-coated, then lay them out in a single layer on a baking sheet.  Leave as much space between pieces as possible so that they get crispy.

These Sweet Potato Fries might be the only fries you don't feel guilty about eating! Easy to make for a weeknight meal too!

Ingredients
  

  • 3 large Sweet potatoes ((or 4 medium))
  • 2-3 Tbsp Oil ((I use coconut oil))
  • salt & pepper to taste
  • Cinnamon to taste

Instructions
 

  • Preheat oven to 425 degrees.
  • Scrub the sweet potatoes, but leave the skin on. Trim the ends flat. Cut 1/4" circles (or smaller if you want thinner fries). Then cut the rounds into 1/4" fry strips (or smaller if you want thinner fries).
  • Place them in a large bowl and drizzle oil on them. Sprinkle with salt, pepper and cinnamon. Mix them around until fully coated.
  • Lay them in a single layer on a parchment lined or well greased foil lined baking sheet. Bake for about 30 minutes or until they are to your desired crispiness.
  • Thinner fries tend to get crispier, but they won't get as crispy as fries that are cooked in a deep fryer. They will be soft in the center and absolutely delicious!
  • They are fantastic right off the tray, but I like to serve them with mayonnaise or mayonnaise with a little sriracha or chopped chipotle peppers mixed in if I am not keeping to an AIP diet. Ketchup is good too!
