Cupcakes
This is the category for the individual sized gluten-free cake we call cupcakes. The difference between a muffin and a cupcake is that a cupcake has frosting. The frosting is often the star of the show. That is certainly true with these Coconut Cupcakes with Lime Frosting or Irish Coffee Cupcakes. I happen to be a huge fan of Not So "Vanilla" Cupcakes that are named that way because they are not ordinary at all. The frosting and the cupcake are rich, buttery, and deeply vanilla with real vanilla bean specks if you choose. Banana Cupcakes with Cream Cheese Frosting are another one that should not be underestimated. They are one of my most highly requested recipes and I have had several people who don't like bananas or banana bread tell me that they are obsessed with them.
