Helmut Newcake (Paris, France)

Helmut Newcake is a "you must eat here" dedicated gluten free bakery.  They have mastered (and I don't say that lightly) all of the delicate and wonderful pastries and breads that gluten free and food allergy folks like us have longed for and missed out on.  The baguettes, chocolate croissants, cookies, eclairs, tarts, chocolate brioche and other pastries, were all fantastic.  Yes.  I tried them all.  You're welcome;-)  All were made in Helmut Newcake's dedicated gluten free bakery.  So my family and I never had to worry about getting sick (other than by over eating).

We ordered a variety of items and sat outside at a little table trying some of what we all ordered.  Then, one by one, three of us went back inside to order more!  I am sure that they thought we were disgusting, over-consuming Americans.  Well, we were, but for good reason!  My food allergy family has been deprived of this kind of deliciousness for years!

We especially enjoyed the croissants with their crispy outside, flaky & tender inside, just as they should be.  The baguettes were the absolute best gluten free bread I have ever had. EVER.  The baguette had structure, was soft and had the right chew.  It didn't crumble.  It had wonderful flavor.  There wasn't any squeaky noise when I bit through the crust.  They sold them plain and as sandwiches with various fillings.

We tried everything and enjoyed everything (remember, we went back 3 times). We brought some with us to eat the next day.  Very little lasted until the next day, but what did last, was only slightly drier & was still quite enjoyable. Oh- and of course I asked if they shared recipes… nope, they won’t. Uhg. Such a long trip for an amazing dedicated gluten free bakery.
