Easy Guacamole

There’s no excuse to eat the packaged stuff when you have my Easy Guacamole recipe!  Well, unless you can’t find ripe avocados, which has happened to me:-(  This guacamole comes together within minutes and the freshness makes all the difference.  If you have never tried making your own guacamole, give this a try.

Options & Helpful Tips

My Easy Guacamole can be made as chunky or smooth as you like it.  I prefer it to be chunky, so I don’t blend it for very long.  You can also adjust the amount of cilantro and lime juice you add.  I like a lot of fresh cilantro and the tang of the lime.  The lime juice also helps to keep it from turning brown.  If you are making this a few hours prior to serving it, put it in a container and squeeze extra lime juice on top of it.  Put a piece of plastic wrap right on the surface to keep air from getting to it.  Store it in the fridge until you are ready to serve it.  Either pour off the extra lime juice or mix it in (your preference) just before you serve it.

Easy Guacamole

Ingredients
  

  • 4 avocados (pit and skins removed)
  • 3 limes (juiced)
  • 1 bunch fresh cilantro
  • 1 tbsp Avocado oil (omit for plant based whole food diet)
  • salt & pepper to taste (omit salt for plant based whole food diet)

Instructions
 

  • Rinse and drain your cilantro and trim the stems. Cut your avocados in half and remove the pits. Scoop the flesh from the skins.
  • Put half of the avocados (or all if you want a smooth Guacamole) into a food processor or blender along with the remainder of ingredients.
  • When they are well blended, add the remaining avocado & quickly pulse it to combine and give you a few chunks if you want them.
  • Serve with your favorite chips, tostones or tacos.

Notes

  • Note: You can also chop the cilantro by hand then combine all ingredients in a medium bowl and mash with a large fork until you reach the desired consistency.  A blender or food processor is not required to make this Easy Guacamole.

    Don’t care for cilantro, tastes like soap to me, do you have a suggestion for a substitute?

      Hi Nancy! I understand the dislike of cilantro because it tastes soapy… that seems to be an herb that affects people differently. The good news is that with this recipe, you can leave it out completely or you could try flat leaf parsley or basil (which ever you like). I would start with using about 1/2 as much of these herbs and add more if you like. Enjoy!
