Easy Tomato and Basil Sauce is fresh and light with lots of flavor. It is crazy quick and simple to make. Perfect on top of gluten free pasta (my fav is Barilla brand) or spiralized veggies, then top with Easy Garlic Baked Shrimp (seen here in this post), Perfect Thyme Chicken or Skillet Pork Chops for a weeknight meal. And the leftovers will be great for lunch the next day too.
The Ingredients
Simple and fresh. Grape tomatoes, olive oil, fresh garlic, fresh basil, a little white wine and a dash of sugar. Season with salt and pepper. That's all there is to it!
Making the Easy Tomato and Basil Sauce
Start by heating up a large skillet to a medium heat with olive oil in the pan. Add the tomatoes, season with salt and pepper. Allow them to heat up enough that the skins start to blister and burst. This releases all of the wonderful natural juices. Then use the back of your spoon or spatula and lightly press the tomatoes until you feel them pop. This will help to release the tomato juice goodness and speed up the cooking process a bit. And it is fun;-)
Once most of the tomatoes have burst, add the chopped garlic, wine and sugar, let it heat up, give it a stir and taste to check the seasonings. Add more garlic, wine, salt or pepper, if needed. Turn the heat off and stir in the fresh basil. Pour it on top of pasta or warm, spiralized zucchini alongside your favorite protein. And you are ready to eat! Looks and tastes like it is fresh from your garden. If only I could keep a plant alive, this might actually be possible! LOL!
Easy Tomato and Basil Sauce
Ingredients
- 1 tablespoon olive oil
- 2 pints grape tomatoes - approximately 4 cups
- 2 cloves fresh garlic - chopped finely
- ¼ cup white wine
- ½ teaspoon sugar
- ¼ cup fresh basil - roughly chopped
- salt and pepper to taste
- shredded parmesan cheese for serving - *optional
- 1 recipe Easy Garlic Baked Shrimp
- 1 box gluten free pasta, cooked al dente - I like Barilla brand
Instructions
- In a large frying pan, heat olive oil over medium heat. Add tomatoes, season with salt and pepper and let them cook for about 10 minutes, stirring occasionally. They will begin to burst open, help them along by gently pressing on them with the back of your spoon or spatula.
- Add the garlic, wine and sugar. Stir to combine. Let it cook for another 2-3 minutes to soften the garlic. Taste and re-season if needed.
- Turn off the heat and add the basil to the tomato mixture and give it a stir. The sauce is ready to pour on top of cooked pasta or warmed zucchini spirals and you are ready to serve! Sprinkle with freshly grated parmesan cheese if you wish. Add Easy Garlic Baked Shrimp for a complete meal!
