Double Chocolate Bites
These Double Chocolate Bites are the answer to our family’s snacking issues! When we take a road trip, we always want something that we can easily eat in the car. We always want some sweet options and my husband always wants something with chocolate. So I started making little bites of deliciousness that were easily portable and you can eat in one bite while driving- without risking our lives:-)
Making Double Chocolate Bites
All of the ingredients, except the chocolate chips, go in the food processor at the same time. A few pulses should bring the mixture together and a few more will help to make it a smoother mixture. Try to form about a tablespoon of the mixture into a ball. If it is too mushy and doesn’t hold it’s shape, add more dry ingredients. Too dry and crumbly, add more nut butter or honey. Add in the chocolate chips last and just give it a pulse or two to get them mixed in. Finally shape into round bite-sized portions or press into a plastic wrap lined loaf pan to shape into bars. Roll or dust with coconut, cocoa powder or chopped nuts if you’d like.
Nut Free and Other Substitutions
I love the combination of chocolate and peanut butter, but if you can’t have peanuts, try substituting a nut free butter, coconut manna or a coconut butter like Nikki’s Dark Chocolate Fudge would work really well in this recipe. The oatmeal, grated coconut and ground flax seeds hold it all together so you can substitute any of these ingredients for each other.

Double Chocolate Bites
Ingredients
- 1 cup oatmeal (I use Bob’s Red Mill Gluten Free Instant)
- 1 cup unsweetened grated coconut
- ⅔ cup Chocolate Peanut Butter (I use Peanut Butter and Co. brand)
- ½ cup ground flax seed
- ⅓ cup honey (*sub with agave if vegan needed)
- ½ cup mini chocolate chips
Instructions
- Add the first 5 ingredients to a food processor and blend until well combined. If mixture is too crumbly add a few more tablespoons of chocolate peanut butter. If it is too moist, add a little oatmeal and blend again.
- You want the mixture to hold together and for the bite to keep its shape. Add the mini chips then pulse just to get them combined. Roll into quarter-sized bites.
- Another option is to make these into bars… press the mixture into a plastic wrap or parchment lined 5 x 9 pan. Let it chill in your fridge for several hours before removing it from the pan and cutting into squares or bars. You may need to wet your knife to get a clean cut and rinse it off a few times while you cut it into bars.
- You can coat them with powdered sugar, cocoa powder, melted chocolate, finely chopped peanuts, grated coconut or just leave them as they are… delicious no matter what!
- Store in an airtight container in your fridge.
