Roasted Broccoli is one of my family's favorite weeknight sides. When I was a kid, I liked my broccoli smothered in cheese sauce. I actually still like it that way but, I try very hard to only eat it that way on holidays. Of course I have to help eat the leftovers for a few days too;-) Hee hee. Now that I am all grown up (am I really?), I like Roasted Broccoli. Roasting makes it easy to pile on flavor and keep it pretty healthy. When I let it get crispy, it seems indulgent. As if I am eating something that I really shouldn't. When dairy has been okay to use in our house, I use a little grated parmesan cheese on our roasted broccoli. It satisfies my "cheesy tooth" without going overboard… save that for the holidays;-)
Season it Up!
I often buy pre-cut and washed broccoli florets to save time on weeknight meals. Then just pour the bag of broccoli in a large bowl, drizzle it with olive oil, then sprinkle on the salt, pepper, garlic powder and grated cheese/nutritional yeast. Mix that all around to coat the broccoli evenly, then it all goes onto a parchment lined baking sheet in a single layer. In about 20 minutes, it will come out of the oven all ready to enjoy. It is that easy!
Dairy Free Cheesy Flavor
If you are looking for a dairy free substitute for cheesy flavor, check out Nutritional Yeast. Bragg has a nutritional yeast that can be found in most specialty grocery stores. It claims all kinds of health benefits, is vegan, gluten free, dairy free, sugar free and allergy friendly. I use nutritional yeast to add dairy free cheesy or nutty flavor to dishes and the flavor is really great. My kids love it too. When using nutritional yeast instead of parmesan cheese in my Roasted Broccoli recipe it is paleo, aip, gluten free, dairy free, nut free, soy free, egg free, vegan and allergy friendly.

Roasted Broccoli
Ingredients
- 2 lbs broccoli florets - rinsed and trimmed
- 2 tablespoon olive oil - or any oil you want to use
- ⅓ cup nutritional yeast - or grated parmesan cheese
- 2 teaspoon garlic powder
- salt & pepper to taste
Instructions
- Preheat oven to 425 degrees.
- In a large bowl add your broccoli and toss with oil until well coated. Sprinkle and toss all remaining ingredients until well coated (adjust the amount of seasonings to your taste).
- Spread your broccoli onto a parchment lined baking sheet in a single layer.
- Roast for about 20 minutes if you still want them to have some crunch & retain some of their color. You can leave them in longer if you want them browned & more crispy. Serve them up right away because they cool quickly.
