Roasted Sweet Potatoes

I love the mix of sweet and savory flavors with these Roasted Sweet Potatoes.  They smell incredible when they are roasting in the oven.  The cinnamon, garlic and cumin turn these sweet potatoes into a warming comfort food.  And they are healthy too!  Of course they are gluten free, also free of nuts, dairy, soy and eggs.  This means they are also vegan and paleo friendly.  If you are on the first 30 days of the AIP diet, just omit the cumin and they are good for that too!

Easy to Make

Making the Roasted Sweet Potatoes is super easy.  Start by scrubbing the potatoes and leave the skins on.  Cut them into 1 inch cubes.  Throw them in a big bowl.  Drizzle with oil and sprinkle the seasonings on.  Give them a toss to get the seasonings evenly coated.  Then lay them out on a parchment lined baking sheet. 

Once they are done roasting in the oven, just pour them into a serving bowl and they are ready to go!  I especially like to serve them with Company-Worthy Easy Lamb Roast with a side of Mint Awesome Sauce, or with Sweet and Spicy Chicken, Curried Chicken Meatloaf or Cumin and Lime Marinated Flank Steak.

Ingredients
  

  • 4 large Sweet potatoes (washed and cut into 1" chunks)
  • 2 Tbsp olive oil or melted coconut oil
  • 1 tsp Salt
  • 1 tsp garlic powder
  • 1 tsp cumin (omit for AIP diet)
  • ½ tsp cinnamon

Instructions
 

  • Preheat oven to 375 degrees. Line a large sheet pan with parchment paper.
  • Scrub and rinse the sweet potatoes. Cut them into approximately 1 inch chunks.
  • In a large bowl, place the sweet potatoes and drizzle with oil and toss or stir to coat all of the potatoes. Sprinkle with seasonings and continue to stir or toss to coat the potatoes evenly.
  • Pour the potatoes out in a single layer on the lined sheet pan. Bake for 25-30 minutes. If you would like them browned more, broil on high for 3-5 minutes and they are ready to serve!
