Cod is one of my favorite types of fish. It is a meaty fish, flaky, moist and has a slightly sweet, mild flavor. Let’s call it the white rice of fish, because just about any type of seasoning will taste great with it. Naturally, with this Red Curry Cod, it is seasoned with a sauce made with spicy red curry paste, rich coconut milk and tart lime juice. Put it on a bed of Coconut Rice and top with fresh cilantro for an awesome meal. Oooh! A side of Roasted Broccoli would be awesome with Red Curry Cod too.
Red Curry Paste
You can usually find Thai Kitchen Red Curry Paste at the regular grocery stores along with other Asian foods or near the soy sauce. If you’ve never had it before- it does have a kick of spice. So if you are sensitive to heat, start with a small amount and increase it as much as you’d like. You will also notice ginger and garlic along with the spice. It is super yummy. The lime and coconut milk also help tame the heat and balance the flavor of the sauce. Speaking of the sauce, it is very easy to make. All of the ingredients go in one bowl and you can heat it up in the microwave. That’s it!
Broil the Cod
I have cooked fish in many different ways over the years, by far my favorite is broiling it. It is quick, cooks evenly, the fish remains moist and you can cook a whole tray of fish at one time. For safety sake, make sure to move the rack to the highest part of the oven prior to preheating it. Once the oven is hot, just slide your tray of seasoned fish in and let the broiler do the work. There’s no need to flip it, just let it broil until it flakes easily with a fork. The cod in my pics was about ¾ of an inch thick and took 10 minutes to cook. I recently broiled salmon that was about ¼ inch thick that took only 4 minutes! Broiling rocks.

Recipe
Red Curry Cod
Ingredients
- 4 filets cod or sea bass - 6-8oz uncooked filets are a good dinner size portion per person
- 2 tablespoon olive, coconut or sesame oil
- salt and pepper to taste
- 1 cup coconut milk - I use Aroy-D brand
- 3 tablespoon fresh squeezed lime juice
- 5 teaspoon red curry paste - I use Thai Kitchen brand
- 1 teaspoon soy sauce
- ⅓ cup fresh cilantro, chopped - for serving
- 2 limes - cut into wedges for serving
- 1 recipe coconut rice - see link in post or notes
Instructions
- Set oven rack to the highest level possible. Preferably about 4 inches from the top heating element. Preheat oven to High Broil. Line a sheet pan with aluminum foil for easy clean up.
- In a small microwavable bowl, combine the coconut milk, lime juice, curry paste and soy sauce. Heat for 1-2 minutes until hot but not boiling. Taste & adjust with salt, pepper or more curry paste if you like it spicier. Set aside.
- Pat cod dry with a paper towel. Drizzle with oil and sprinkle salt and pepper on both sides. Place fish on the prepared baking sheet and broil for about 10 minutes depending on the thickness. When they are opaque & flake easily with a fork, they are done. Serve with Red Curry Sauce, sprinkle with chopped cilantro, lime wedges and Coconut Rice.
- My filets were about ¾ inch thick and cooked perfectly at 10 minutes. Every oven is a little different, so I would start checking them around 8 minutes. If yours are very thin, check after 4 minutes.

Rating it a 5 star because it does sound tasty. But you left out how much fish to use a 3/4 inch thick piece isn't enough information.
