Mediterranean Layer Dip

I made this Mediterranean Layer Dip for a gathering at my friend’s house and she asked why I had been holding out on her all these years by not making this before?!?!  It occurred to me how right she was.  I hadn’t made this Mediterranean Layer Dip in a long, long time.  Truly, there wasn’t a reason why.  I usually have almost all, if not all, of these ingredients in our house all of the time.  No need to over think things though, right?  Now I keep this easy, delicious and somewhat nutritious dip at the top of my go-to list.

Sooo Easy

This dip is all about the layering.  Begin with the cream cheese at the bottom.  Spread the hummus on top of the cream cheese.  I used Philadelphia Chive & Onion cream cheese and Ithaca Lemon Dill hummus this time, but you can use plain cream cheese and other varieties of hummus like original, roasted red pepper, garlic or kalamata olive.  Those substitutions will change the overall flavors, but all should taste pretty good together as long as you like them individually.  Back to the layering!  The final touch is to put the feta, olives, tomatoes and scallion on top any way you’d like.  I like to sprinkle them on somewhat evenly so that you get a little of everything in each scoop.  If you have picky eaters, you could always put the toppings in rows.

Scoops

My favorite scoop is English cucumber sliced into coins.  Carrot sticks are also fantastic for a healthy and tasty option.  Pita bread or chips and tortilla chips are also great because they add salt and crunch.

Ingredients  

  • 1 8oz cream cheese - sub vegan cream cheese if needed
  • 1 8oz hummus - any flavor variety
  • ⅓ cup feta cheese - sub Violife vegan feta if needed
  • ½ cup kalamata olives - pitted and sliced
  • ½ cup grape tomatoes - quartered
  • 1 small scallion - thinly sliced
  • veggies or chips for serving & scooping

Instructions

  • Spread the cream cheese in an even layer on the bottom of a shallow serving dish or plate. 
  • Spread the hummus on top of the cream cheese.
  • Sprinkle the feta, olives, tomatoes, scallions on top. Store in the fridge until ready to serve.
  • Serve with tortilla chips, crackers or sliced veggies.
