Parsley Awesome Sauce

This Parsley Awesome Sauce is my version of a chimichurri sauce, which is commonly served in Brazil, Argentina and Uruguay along with grilled meats.  It is so simple that it is silly and it always seems to surprise everyone when they taste how amazing it is.  Certainly, it is an example of how just a few ordinary seasonings along with fresh herbs can transform any dish.

Ingredients

I use fresh flat leaf parsley (not curly leaf), onion and garlic for this recipe.  If I can’t find fresh oregano, I have used dried and it still turns out very well, but I prefer to use fresh if possible.  When it comes to the olive oil, I always make sure to taste it first.  Make sure the flavor tastes great to you, because it will come through in the final sauce.  A flavorless oil is fine at times for cooking, but in a sauce like this, the oil will change the overall flavor.  One of my favorite brands that is readily available in many stores is California Olive Ranch.  They offer enough variety from mild to robust to suit most needs for cooking and dressings in my experience.

How to Make Parsley Awesome Sauce

I prefer to chop the fresh herbs, onion and garlic by hand, then put all of the ingredients in a bowl and mix it with a large spoon.  Easy enough, right?  Another option though, is to put everything in a blender or food processor and pulse it a time or two.  I like the chunky version of the sauce as a result of chopping by hand. The purple from the onion pops out and makes it beautiful.  If you prefer a more homogenous look and a smoother texture, the blender is the way to go. 

Autoimmune Protocol Diet

If you are on the AIP diet, trying to reduce inflammation, and cannot use red wine vinegar, you can substitute it with Ume Plum Vinegar.  My suggestion would be to taste the Parsley Awesome Sauce mixture before adding any salt though.  The Ume Plum Vinegar is very salty so you may not want to add any more to it.  This recipe works really well with the Ume Plum Vinegar, so I don’t see a negative to using this instead of the red wine vinegar, it is just a different flavor.  Of course, omit the optional red pepper flakes as well for this diet.

Parsley Awesome Sauce is a simple and flavorful mix of fresh herbs, vinegar & olive oil that is quick and easy to make and adds a ton of flavor to meats and vegetables.

Ingredients  

  • 1 bunch fresh flat leaf parsley - rinse and trim stems
  • 1 tablespoon fresh oregano - can sub 1 teaspoon dried oregano if needed
  • ⅓ cup red onion - finely chopped
  • 3 cloves fresh garlic
  • ¼ cup red wine vinegar - sub ume plum vinegar if following aip diet
  • ½ cup good quality olive oil
  • salt & pepper to taste

Instructions

Hand Chopped

  • Finely chop parsley, oregano, onion and garlic.
  • Put all ingredients in a small bowl and combine well.
  • Serve on grilled meats, seafood or veggies. Store in a sealed container in the fridge for 2-3 days, it will start to brown as time goes on but will still taste great for several days.

Blender

  • Rinse, peel, trim and roughly chop all ingredients as needed and put into a smoothie maker or blender. Pulse a few times until herbs are chopped and ingredients are well combined.
